Ai vai uma receita campeã de nossa amiga Cheryl

Zucchini Bread

1. Combine and beat together...
3 eggs, slightly beaten
1 1/2 cups sugar
1 cup oil
2 cups zucchini, grated
1 teaspoon vanilla

2. Sift together...
3 cups sifted flour
1 teaspoon salt
1 teaspoon soda
2 teaspoons cinnamon
1/4 teaspoon nutmeg
1/2 teaspoon baking powder

3. Add dry ingredients to egg mixture and stir well.
4. Add, if desired..... 1/2 cup chopped nuts
5. Pour into 2 well-greased 4 1/2" x 8 1/2" loaf pans.
6. Bake 1 hour at 325, until sides come away from the pan, and a toothpick test is clean.

Yields: 2 loaves
